Healthy sweet potato muffins


1 large sweet potato
10 tablespoons maple syrup
60 g pecan nuts or walnuts
125 g spelt flour
125 g ground almonds
2 eggs
125 ml almond milk
1 teaspoon baking powder
1 vanilla pod
8 tablespoons good olive oil
pinch of salt

These muffins that contain sweet potato make a great snack or a wonderful way to start your day. Sweet potatoes are so nutritious, you can’t start enjoying them early enough.

    Pre-heat the oven to 200 degrees C.

    Peel and cut the sweet potato into chunks. Simmer in water in a small pan until soft (about 8 minutes).

    Pour the almond milk and oil into a bowl and combine. Then add the baking powder and vanilla bean marrow followed by the maple syrup, ground almonds, and pinch of salt and whip with a whisk. Add the eggs and continue to whisk until combined.

    Mash the sweet potato thoroughly, chop the nuts coarsely, and add these ingredients to the batter. Pour the batter into a 12-muffin tin and place the tin in the oven. Bake for about 30 minutes and test whether they’re done. Bake a few minutes longer if necessary.

    Let the muffins cool and then tuck in!

    Tip: freeze the muffins in batches of 2, take them out of the freezer in the morning and put them in the oven frozen. After a few minutes they are delicious again. That way you have fresh enjoyment every morning!
