Healthy sweet potato muffins

These healthy sweet potato muffins are perfect for a snack or breakfast. Sweet potatoes are so healthy, you can’t start early enough.

Ingredients

1 large sweet potato
10 tablespoons maple syrup
60 g pecan nuts or walnuts
125 g spelt flour
125 g almond flour
2 eggs
125 ml almond milk
2 tsp baking powder
1 vanilla pod
8 tablespoons good olive oil
pinch of salt

Preparation

    Preheat the oven to 200 °C.

    Peel the sweet potato, cut it into pieces and cook in a pan with water for 8 minutes until tender.

    In a bowl, mix almond milk and olive oil together. Then add the baking powder and vanilla powder, followed by the maple syrup, flour, pinch of salt, and whisk to combine. Also mix in the eggs.

    Mash the sweet potato, roughly chop the nuts, and mix them into the batter. Pour the mixture into a muffin tin with 12 cavities and place them in the oven. Bake them for about 30 minutes, depending on your oven.

    Allow the muffins to cool for a while before enjoying!

    Tip: freeze the muffins in pairs, take them out of the freezer in the morning and place them in the oven while frozen. After a few minutes, they will be delicious again. This way, you can enjoy a fresh treat every morning!
