Cut the cucumber into wafer-thin slices and fan them out on the plates. Finely chop the small onion and sprinkle over the cucumber. Now cut the passion fruits in half and spoon out the flesh. Spread a little olive oil, salt and pepper on the plates.

Clean the pomegranate. Score the pomegranate into quarters, but don’t cut through all the way. Break the pomegranate into parts. Now you can easily peel out the pomegranate seeds.

The physalis can be easily removed from the lanterns. Wash the orange berries and cut into quarters. Divide the pomegranate and physalis over the salads.

Garnish the salads with a little rocket, chopped pecans and a mini burrata or mozzarella. Variation tip: goat’s cheese or feta cheese also tastes great
