Preheat the oven to 200 degrees.

Slice the onions into half-rings and fry them gently for 15–20 minutes. Add the balsamic vinegar at the end.

Place the puff pastry on a baking tray lined with baking paper and prick holes in the centre. Fold the edges over slightly.

Scatter the onion over the top, crumble the goat’s cheese and place the figs on top, with the inside facing upwards.

Sprinkle with thyme and walnuts.

Bake for 20–25 minutes until golden brown.

Finish with honey, rocket and, if you like, a little more pepper.
