Start by making the crumble dough. Weigh the ingredients carefully and mix the almond flour with the sugar, biscuits and a pinch of salt.

Make sure the butter is not too soft and crumble it between your fingers through the dough. Crumble with your hands, do not knead. Cut the pecans into pieces and mix them through the dough.

Cut the figs into small segments and divide them over the moulds. Take a small cake tin, or 4 small single moulds. Finally, divide the shortbread dough and cover the figs.

Bake the fig crumble in a preheated fan oven at 175 degrees in about 20 to 25 minutes.

Garnish the warm crumble with a piece of fresh fig, pecan and a dollop of cottage cheese.
