Festive sweet potato and green asparagus quiche

Enjoy this delicious festive sweet potato and green asparagus quiche. Although it’s perfect for any time of the year, it’s especially a delightful addition to your table during the holidays. Enjoy it as a starter, side dish, or as part of a festive lunch. You’ll find yourself savouring every bite!

Ingredients

  • 400 g sweet potato peeled and thinly sliced
  • 300 g green asparagus, cleaned and halved
  • 1 pack of pastry dough (10 slices)
  • 200 ml plant-based cream
  • 4 eggs
  • 150 g plant-based cream cheese
  • 1 clove of garlic
  • 2 tsp dried oregano
  • 60 g sun-dried tomato
  • 100 g vegan goat’s cheese

  • Baking paper
  • Flour

Preparation

    Preheat the oven to 180 °C.

    Remove the savoury pie dough from the freezer and allow it to thaw. Grease the quiche mould with a little oil and line it with baking paper.

    Place all the slices of savoury pie dough on a floured countertop and roll out to the size of the baking tin.

    Then top the dough with the sweet potato slices. Add the green asparagus and dried tomato on top. Crumble the goat cheese and divide over the quiche.

    Now place the cream, eggs, cream cheese, oregano and garlic in a mixing bowl and mix well. Season with salt and pepper. Then pour the mixture over the quiche.

    Bake the quiche for 45 minutes. If the top gets too dark, cover it with aluminium foil.
