Dulce de higos of helio & priscila from brazil

Ingrediënts

1 box of fresh figs (24 figs)
3 cups sugar
1 cups filter coffee
a pinch of ground cloves
1 cup sugar

This recipe is a favourite of our Brazilian farmers, Helio and Priscila. Dulce de higos are caramelised figs in syrup. They are very popular in Brazil where they are eaten as a dessert. Delicious with yoghurt, ice cream or as filling for a pie or cake.

Preparation

    Rinse off the figs and remove their stems.

    Put the figs in a pressure cooker. Then add the 3 cups of sugar, the coffee and the cloves. Close the lid and cook for 45 minutes.

    Turn off the heat, allow the pan to cool, open the lid, and add the remaining 1 cup of sugar.

    Cook for another 10 minutes until the sugar has caramelised.
  • 5
    Refrigerate and serve cold.
