Passion Fruit Coulis
Place the pulp of the passion fruits in a saucepan and bring it to a boil along with the agar agar. Add the powdered sugar and let it simmer for 1 to 2 minutes. Strain the passion fruit mixture to remove the seeds. Transfer the strained mixture to the refrigerator to cool and set. You now have a passion fruit coulis.
Crush the speculoos cookies. You can do this by placing them in a bag and pounding them with a rolling pin, or by briefly grinding them in a food processor.
Melt the vegan butter or coconut oil in a saucepan and mix it with the crushed cookies. Set this aside.
The Light "Cheese" Mixture
Pour the vegan whipping cream into a bowl and whip it together with the powdered sugar until fluffy.
In another bowl, use a mixer to loosen the vegan cream cheese. Once the cream cheese is smooth, add the passion fruit coulis and mix well until it forms a unified mixture. Gently fold in the whipped cream and the zest of the orange with a spatula, ensuring it retains the lightness of the whipped cream.
Now it's time to get creative with the garnish! Start by placing some cookie crumbs on the plate and spoon a portion of the cream cheese mixture over them. If there's remaining passion fruit coulis, you can drizzle it over the top or arrange it around the mixture. Garnish the dish with mango cubes, a lime wedge, additional passion fruit, pistachios, and shredded coconut.
Agar agar is a vegan gelling agent, serving as an alternative to gelatin, which is derived from pigs. It aids in setting dishes as they cool.
