Corn tortilla with butternut & avocado


400 g butternut squash, in small cubes
200 g black beans, from a can, drained
1 tsp. cumin powder
4 small corn tortillas
2 handfuls mixed salad greens
1 diced avocado
15 cherry tomatoes, cut into quarters
1 spring onion, in rings
fresh herbs, like flat-leaf parsley, oregano, etc.
spicy or sweet chilli sauce to taste

This corn tortilla with butternut squash and avocado is a healthy dish that is quickly on the table. A tasty and healthy recipe for weekday meals.

    Steam the butternut squash for approx. 7 minutes until done.

    Mix the black beans and cumin powder and heat in a pan.

    Prepare the tortillas according to the instructions on the package.

    Place the lettuce, butternut squash cubes, beans, avocado cubes, and spring onions on the tortilla.
