8 slices of bread
2 chicken breasts
1 large tomato
1 ripe avocado
8-12 slices of bacon
A club sandwich is a double-decker sandwich, with decadent layers upon layers of ingredients. All of the flavours come together beautifully in this Californian version, not in the least owing to the creamy avocado, of course!
Fry the chicken and cut into pieces. Fry the bacon. Slice the tomato. Slice the avocado. Lightly toast the bread.
Mix the mayonnaise and mustard in a bowl. Smear this mixture onto every slice of bread.
Layer the ingredients on three slices of bread as follows: chicken, tomato, avocado, bacon. Then stack one loaded piece of bread on top of the other.
Place the fourth slice of bread on top and then slice in half diagonally. Use a cocktail stick to hold each half of the club sandwich together if necessary.
