1 tbsp extra virgin olive oil
2 chicken breasts
70 g bacon
1 red onion, cut into wedges
4 figs, halved lengthwise
2 tsp dark brown caster sugar
100 ml white wine
100 ml chicken broth
2 tsp red wine vinegar
7 sprigs fresh thyme
A delicious main course for Christmas! This juicy chicken with fresh figs from the oven has a delicious taste and is a real showstopper.
Preheat the oven to 200ºC. Heat the oil in a frying pan or saucepan over a high heat.
Sprinkle the chicken breasts with salt and pepper and brown on both sides in 3 minutes. Place them in a small oven dish.
Add the bacon and onion to the pan. Fry the bacon on a medium heat in ± 5 min. Crisp, with regular stirring. Spoon the mixture into the oven dish with the chicken. Pour the excess fat from the pan.
Sprinkle the sliced sides of the figs with the sugar. Place them with sliced side down in the pan. Let them caramelise in 3 minutes. Put them on a plate.
Pour the wine into the pan, reduce to a moderate heat for 2 minutes.
Add the stock and vinegar and boil for 2 minutes. Scoop the chicken and the bacon back into the pan. Sprinkle with thyme.
Put in the oven for 30 minutes or until the chicken is done. Add the figs and serve.
