Chicken Skewers with Haricots Verts with peanut and lime


300 grams chicken thighs
1 lime
1 tbsp oil
1 tbsp honey
250 grams haricots verts
1 red onion
1 or 2 tsp. harissa sambal
1 handful of peanuts
2 portions of brown rice
3 cloves of garlic
1 thumb of ginger
fresh parsley

Try these delicious chicken thigh skewers with haricots verts ! By stir-frying the haricots verts, they retain most of their flavour and vitamins and they stay nice and crispy. Or prepare the chicken skewers on the BBQ!

    Cut the haricots verts on one side, you can leave the small thin tips.

    Cut the chicken thighs into 4 large pieces. Marinate the chicken in lime juice, oil, honey, salt and pepper. Mix well and thread onto skewers. Grill the skewers over medium heat until golden brown on both sides and cooked.

    Cook the rice in water, the correct ratio is 1 cup of rice to 2 cups of water. Turn down the heat when the rice is boiling and cover the pan with a lid. The rice does not need to be drained and will be full of flavour.

    Make a spiced ginger-garlic salsa. Clean and finely grate the ginger root. Squeeze out the garlic cloves and mix together with chopped parsley, coarsely ground pepper and salt.

    Cut the red onion into pieces or half rings. Stir-fry the haricots verts and the onions in a wok with a dash of oil. Toss regularly. After a few minutes, the beans are al dente and the heat can be turned down. Stir in some harissa sambal to taste for a spicy twist.

    Garnish the harticots verts with finely chopped peanuts. Spread the spiced ginger-garlic salsa over the chicken skewers. Serve with the rice.
