Chicken casserole with kumquat sauce


4 chicken breasts
12 fresh kumquats
50 ml olive oil
1 cinnamon stick
1 tsp. saffron
1 tbsp. grated ginger
1 glass of sweet white wine
Juice from 1 orange
Salt and pepper
1 large onion, diced
1 clove of garlic, diced

You can easily produce something special by stewing this chicken in your homemade kumquat sauce. This is an incredibly simple recipe that tastes fabulous thanks to the fresh kumquats in the sauce.

    Place the kumquats in a pan with boiling water and let these cook through for a few minutes. Drain, allow to cool, and then slice all the kumquats in half.

    Fry the chicken breasts in a large pan with the olive oil. Add the cinnamon, saffron, and ginger, and fry until the chicken is evenly golden brown.

    Now add the wine and the orange juice and let the chicken stew until tender. Once the sauce has thickened slightly, add salt and pepper. Reduce the heat and add the kumquats, onion, and garlic. Allow all of this to continue to stew until all the flavours have soaked in to one another.
