Chia pudding with mango and lime

Healthy, exotic and fresh. This chia pudding is delicious for breakfast, snack or dessert.


1 mango
200 ml plant-based milk
1 lime, zest + juice of ¼ lime
1 tsp vanilla extract
1 tsp agave or maple syrup
3 tbsp chia seeds

For garnish:
Plant-based yogurt (e.g., soy or coconut)
Shredded coconut

    Put all ingredients, except the chia seeds, in a blender and blend finely until completely smooth.

    Put the chia seeds in a sealable jar or container. Pour in the mango milk from the blender and shake it so that the chia seeds are mixed in completely.

    Once five minutes have passed, shake the mixture again and place it in the fridge. This will prevent the seeds from sinking to the bottom later.

    Leave the mixture in the fridge for at least 2 hours. But this can also be longer, up to about 2 days. This will give the chia seeds a chance to absorb moisture, creating a pudding-like texture.

    Once you are ready to eat the chia pudding pour it over into a glass and finish the pudding with your desired garnishes. Enjoy your meal!
