Causa limeña

Ingrediënts

½ bunch of green asparagus
2 tbsp. mayonnaise
30 ml vinegar
½ avocado, sliced
300 g potatoes (preferably a yellow variety) for the mashed potatoes
100 g red onion, finely chopped
1 yellow chilli pepper, finely chopped
1 sprig of fresh dill, finely chopped
½ tsp. crema di ají (yellow chilli pepper paste)

This recipe for causa limeña comes from our farmer in Peru, who tells us this is a typical Peruvian recipe using cold potatoes. You can prepare it with various fillings, but it's no surprise that we like to use green asparagus! This recipe is traditionally made with a yellow chilli pepper called Ají Amarillo which is often used in Peruvian cooking, but you could also use other kinds of peppers.

Preparation

    Peel, cook and mash the yellow potatoes. Add the dill, crema di ají and a few drops of vinegar. Season with salt and pepper.

    Blanch the green asparagus and cut into pieces. For the filling, combine the onion with the yellow chilli pepper and then add the pieces of green asparagus. Season with salt and vinegar. Fold in the mayonnaise.

    Spread the filling between the two layers of mashed potatoes. Garnish with the avocado slices.
