200 grams green beans
200 grams of cauliflower rice
100 grams of lentils
200 grams of chicken fillet
½ red pepper
1 clove of garlic
2 tbsp peanut butter
½ tbsp sambal (chili paste)
100ml of water
This cauliflower rice with beans is a delicious low-carbohydrate meal. Now that the summer season is approaching, it is nice to have slightly lighter and healthier meals. And that doesn't just apply to top athletes. Cauliflower rice is an ideal replacement for regular rice and it adds an extra portion of your five a day.
Cut the chicken breast into cubes and remove the ends of the green beans. Cut the red pepper in half and make small strips. Cook the green beans in water for 4 minutes. Set aside.
Fry the chicken in olive oil and season with salt and pepper. Stir-fry the cauliflower rice with the lentils for 4 minutes.
Put a saucepan on medium heat with the peanut butter, water and sambal. Blend until the right density is reached. If needed, add some water.
Fry the red pepper and garlic in olive oil for a minute. Add the beans and stir-fry for 2 minutes on high heat. Season to taste with salt and pepper.
Combine all ingredients and pour the peanut sauce over it. Bon appetit!
