Butternut squash gratin with feta and nuts


½ butternut squash
50 ml of honey
100 ml of olive oil
1 tbsp. fresh thyme
Salt and pepper to taste
200 gr feta (crumbled)
50 gr walnuts (crumbled)

A beautiful gratin with butternut squash, feta and nuts, a nice side dish with for your Christmas dinner. You can prepare this gratin in advance, which will save kitchen stress!

    Preheat the oven to 175°C.

    Now cut half of the butternut squash into cubes of 3x3 cm, and put them in another oven dish. Add the honey, olive oil, thyme, pepper and salt and stir well. The squash can now go in the oven for 4x8 minutes.

    After every 9 minutes you stir the squash well, until you have done this 4x.

    Then divide the squash over the ‘beautiful’ oven dish, and cover with the crumbled feta and walnuts.

    The dish can be put back in the oven for about 10 minutes, until the feta has turned a bit brown.

    Tip: You can prepare the whole dish in advance the day before. You do this up to when you have covered the squash with the feta and walnuts. When the dish has completely cooled down, cover it and put it in the refrigerator. This can prevent some kitchen stress! The dish is most delicious when it is served straight from the oven.
