500 g butternut squash cut into small dice
80 g powdered onion soup mix
250 g (streaky) bacon in small pieces
250 ml cream
150 g feta cheese cut into small dice
Our farmer Charl gave us this lovely recipe for Butternut Bake, a popular dish in South Africa. It's often served as a side dish as part of the traditional South African barbecue known as a braai.

Pre-heat the oven to 180°C.

Cut the squash in half lengthwise and scoop out the seeds. Cut the squash into slices, remove the peel, and then cut into small dice. Place the diced squash into a greased baking dish.

Combine the onion soup powder with the cream. Pour this mixture over the diced squash. Distribute the bacon pieces and diced feta over the butternut squash.

Place in the middle of the oven and bake for 45 minutes or until the butternut squash is soft.
