4 thick slices of multigrain bread
8 slices of bacon
2 tbsp sesame seeds
2 tbsp dairy spread
50 g rocket
Another delicious recipe from Dutch TV chef Mathijs Vrieze. If you fancy eating something like a burger for brunch, this recipe makes a healthy alternative! It's a tasty thick slice of multigrain bread with avocado, soft-boiled egg and fried bacon. A big advantage is that it uses standard ingredients you usually have at hand, so it's easy to create a delicious lunch or brunch sandwich almost anytime.
Soft-boil the eggs if you like them that way, so that the egg yolk is still nice and runny. Fry the bacon slices in an ungreased frying pan over medium heat. This will crisp up the bacon, leaving the fat behind. Once the bacon is golden brown, remove it from the pan.
Cut the avocados lengthways right up to the pit. Twist the two halves away from each other and remove the pit. Sprinkle a saucer with sesame seeds. Press the avocados into them. Scoop the avocado pulp out of its skin. Briefly sauté the avocados in the pan used to fry the bacon. This gives them additional flavour. Sauté over a medium heat until avocados and sesame seeds are golden brown. Sautéing them briefly like this brings out the avocados’ nutty flavour.
Season the dairy spread to taste with finely chopped rosemary, plenty of freshly ground pepper (coarse grind) and a small pinch of sea salt. Cut thick slices of the multigrain bread. Spread two slices with the seasoned herbed dairy spread, add a few rocket leaves, two slices of crispy bacon, half the fried avocado, and top with a soft-boiled egg and the second slice of bread.
