2 chicken breasts
1 papaya (ripe, but not too ripe)
1 tbsp. olive oil
2 tbsp. ketjap (Indonesian-style soy sauce)
2 tbsp. sweet chili sauce
Salt and pepper
Wonderfully exotic from the barbecue! The papaya makes these skewers freshly sweet, and the ketjap gives them an Asian touch.
Preparation

Mix the olive oil, ketjap, chili sauce, pepper, and salt in a bowl to make a marinade. Cut the chicken into (medium-sized) cubes, add to marinade, cover, and allow to rest for 1 to 2 hours in the refrigerator.

Cut the papaya into large cubes. Alternate the chicken and papaya on each skewer. Fill as many skewers as you have ingredients for.

Grill the skewers on the barbecue and then enjoy.

These can also be made indoors using a grill pan if the weather isn’t cooperating.

Do you have some papaya left over? Add it to some mango and other fabulous fruits to create a delicious fruit salad to serve at your barbecue.
