Baked sweet potato with lemon and olive oil

It’s easy to bake potatoes in the oven, microwave or barbecue. Baked sweet potatoes have a delicious flavour and are nice and soft, completed with olive oil, lemon zest, sea salt and pepper.


4 small/medium sweet potatoes
50 ml olive oil
1 lemon
Sea salt and pepper to taste

    Preheat the oven to 180 °C.

    Thoroughly wash and dry the sweet potatoes.

    Prick holes in the potatoes with a fork in several places.

    Place the potatoes on an oven rack with an oven tray underneath to catch any moisture.

    Bake the potatoes in the oven for about 45-50 min.

    The potatoes are done when they are soft on the inside and crispy on the outside, you can check this with a fork.

    Cut a cross in each potato with a knife and widen the opening a little.

    Serve the sweet potatoes on a platter, drizzle with olive oil, and grate the lemon zest on top. Season with sea salt and black pepper.

    No time? Pierce the potatoes and place them in the microwave for 5 minutes, turning them midway, and then microwave for another 5 minutes on full power until cooked.

    Tip: Wrap the sweet potatoes in aluminium foil and bake them on the barbecue!
