Baked sweet potato filled with avocado


4 Discovered sweet potatoes
1 Discovered avocado
1 tomato
1 large mozzarella ball
Pinch of salt and pepper

A delicious light lunch made of sweet potato, avocado and tomato!

    Pre-heat the oven to 200°C.

    Scrub the sweet potatoes clean. Place in an ovenproof dish and coat thinly with olive oil.

    Bake in the oven for 40 minutes and leave the oven on afterwards.

    Remove the sweet potatoes from the oven and allow to cool slightly. Meanwhile, cut the mozzarella and tomato into chunks. Cut each sweet potato in half and fill with mozzarella and tomato.

    Put back in the oven for a further 7 minutes.
