Avocado with egg from the oven


4 ripe avocados
8 small eggs (size S)
pepper and salt
Grated cheese
Olive oil
Parsley or spring onion (optional)

This sunny avocado recipe is delicious as breakfast or lunch and as dinner with a salad on the side.

    Preheat the oven to 200 °C.

    Cut the avocados in half and remove the seed. Scoop them a little deeper, to ensure the egg will fit. Sprinkle some pepper and salt over the cavity of the avocado.

    Place the avocado halves in a baking dish. Break an egg in every avocado half. Sprinkle the grated cheese on top and sprinkle with olive oil.

    Bake the avocados in about 15 minutes in a preheated oven.

    The stuffed avocado is ready when the egg has set.

    Garnish to taste with fresh parsley or sliced spring onion and serve immediately.
