1 avocado
50 gr feta cheese
1 tsp pesto
1 egg
1 (Turkish) bread roll
a few radishes
fresh chervil or parsley
The combination of ripe creamy avocado and salty feta cheese with pesto is a treat on a sandwich.
Preparation

Boil an egg medium soft, or to your own taste. Option: you can also fry the egg or scramble it.

Take a ripe avocado that feels a little soft when you hold it in the palm of your hand. Cut the avocado in half, remove the seed and scoop out the flesh in one smooth motion.

Mash half of the avocado with a fork, cut the other half into slices. Mash the feta cheese through the avocado and season with coarsely ground pepper and a teaspoon of pesto. No added salt needed.

Cut the bread in half and briefly toast the cut side in the frying pan. Top the (warm) bread with the avocado-feta spread. Garnish with slices of avocado, radish, fresh chervil/parsley and the egg.
