This super easy recipe requires a food processor or hand blender. Blend the avocado flesh, maple syrup, cocoa powder, salt and vanilla extract in the food processor until you get a smooth mixture. Spoon this mixture into a shallow bowl, cover and place in the freezer for 2 hours.
While waiting, you have time to tidy up, watch a series or do something else for yourself. You can also choose to prepare the coconut flakes and pistachio crumbs in a separate bowl.
After two hours, take the mixture out of the freezer and roll it into balls. Coat the balls with the coconut and pistachio mixture. Store chilled or serve immediately.
