Asian rice noodles with sugar snap peas, shiitake mushrooms and pak choi

A delicious Asian noodle dish with crunchy sugar snap peas, shiitake mushrooms and pak choi in a savoury, slightly sweet sauce. Finished with sesame seeds, peanuts, spring onions and lime for extra flavour and freshness.

Ingredients

Serves 2:

  • 200 glass noodles
  • 250 g sugar snap peas
  • 150 g shiitake mushrooms
  • 1 mini pak choi, quartered
  • 1 spring onion
  • 2 cloves of garlic
  • 2 cm of grated ginger
  • 1 lime
  • 1 tbsp sesame oil
  • 1 tbsp sunflower oil
  • 1 tbsp sesame seeds
  • a handful of chopped peanuts

For the sauce:

  • 3 tbsp soya sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sweet soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or brown sugar
  • 100 ml vegetable stock
  • 1 ½ tsp cornflour

Preparation

    Prepare the rice noodles according to the instructions on the packet. Drain and rinse briefly under cold water to prevent the noodles from sticking together.

    Mix all the ingredients for the sauce in a small bowl. Stir in the cornflour thoroughly to prevent lumps from forming.

    Heat the sunflower oil in a large wok. Fry the sugar snap peas, shiitake mushrooms, garlic and ginger for 5–7 minutes over a high heat until the vegetables are cooked through. They should still be nice and crunchy.

    In a separate pan, briefly fry the mini pak choi over a high heat. Add a small glass of water, turn the heat down low and leave the pak choi to steam for a further 2 minutes with the lid on the pan.

    Pour the sauce into the pan with the vegetables. Simmer gently for 1–2 minutes until it becomes nice and glossy and slightly thicker.

    Add the noodles and the sesame oil, and stir everything through well so that the noodles absorb the sauce.

    Spoon the dish onto the plates, arrange the pak choi alongside it and garnish with some finely chopped spring onions, sesame seeds, chopped peanuts and a quarter of a lime.
