American pumpkin pancakes with exotic fruit


½ kg butternut squash
300 ml milk
2 eggs
200 gr flour
1 teaspoon baking powder
Speculoos spices (optional)
Coconut-lime curd cheese
2 mangoes in thin slices
4x passion fruit
Grated coconut (roasted)
Butter for frying

These American pancakes with cottage cheese and exotic fruit are perfect for breakfast. They are easy and quick to make and taste slightly spicy and sweet because of the pumpkin. For an extra winter flavour, you can add speculaas spices.

    Preheat the oven to 200°C. Peel the pumpkin, remove the seeds and cut into pieces. Cook the pumpkin 20 minutes in the oven and let it cool down. (You can do this a day in advance)

    Put the pumpkin with the milk and the eggs in the food processor and let it turn so you get a nice smooth batter. Then add the flour and the baking powder and keep on turning. For an extra wintery flavour, add speculaas spices.

    Make pancakes about 12 cm in diameter. Put a big spoonful of cottage cheese on each pancake and then some mango and passion fruit. Garnish with some coconut and mint.

    Suggested variations: Of course you can also use plain cottage cheese or cottage cheese with another flavour. You can also vary the toppings.
